Not knowing what to expect, I was surprised by the endless laughter we shared, and gained a new appreciation for a plant-based diet. But I get ahead of myself….

    Rooted deep in the St. Louis food and wellness scene, chef Caryn Dugan is STLVegGirl, a plant-based nutrition and culinary educator with a simple mission, “A Plant on Every Plate™.”

    Caryn notes that the A Plant on Every Plate concept is not judgy or difficult, but an easy way to incorporate healthier eating at your own pace. She says, “Eating only plants is not only eating something green – beans, grains, seeds, even cocoa beans (think chocolate!) – plants come in all different forms. However, greens are the most nutrient dense foods. You can be so creative with eating what comes out of the ground. It’s the most healthy way to live, nourish, and thrive.

    Caryn adopted a plant based diet in response to tragedy; in 2008, cancer took her father at an early age and ten weeks later, tried to take her. In response to her diagnosis, she searched for an answer and found one in the growing body of literature supporting a whole food, plant-based diet to bolster our natural immune system. Adopting a vegan diet herself and beating cancer, she sought to share her knowledge to help others.

    In 2011, Caryn studied in Washington, DC, under the direction of Neal Barnard, MD, at the Physicians Committee for Responsible Medicine’s (PCRM) Food For Life program, becoming a certified instructor. Bringing this knowledge home, she teaches immune boosting, plant-based cooking classes at the Cancer Support Center of St. Louis for the benefit of others who have, like her, met cancer at the door.

    What I love most about Caryn’s approach to cooking and teaching healthy eating is that she’s not the Vegan Police. Instead, she inspires us to incorporate nourishing, healthy foods into our lives. And when I asked for her best tip for someone wanting to move toward putting a plant on every plate, she said, “start with whatever you already have in your fridge and pantry, because those are going to be the most familiar foods to you. Don’t make it hard on yourself. Make the food you already like, and veganize it.”

    She started slowly herself, moving from a microwave and frozen-meal diet to learning and researching – and teaching – how nourishing, healthy foods can change your meals – and your life. She worked hard on gaining certificates and education because she didn’t want to lead people down the wrong path with her work – she wants them to learn, eat, and say, “WOW! That was totally worth my time and my money.”

    Perhaps our loudest laughs came from learning about her biggest pet peeve – the phrase “Vegan Food.” Caryn said, “It’s just food!!! It’s just real food. It feeds into that view of vegan as unattainable and hippie. Just because you change what’s on your plate doesn’t mean you have to uproot your entire life. You’re just using real food…not food that is processed, crazy, or something you can’t say or spell. This can be very simple stuff.” Indeed.

    If I’m not in work mode – I usually one-pot meal our nights. You might call them kitchen sink nights: open the fridge and freezer and start pulling things out and throwing them in a large pot. You’d be amazed at how many recipes have come out of nights like this.

    The one who wants to learn.

    The one who has no time for “rabbit food.”

    Recipe: The New Summertime Burger

    2 1/2 tablespoons ground flax
    5 tablespoons water
    1 cup shredded sweet potato (one very small sweet potato)
    8 oz mushrooms, roughly chopped
    1/2 red onion, diced small
    2 garlic cloves, minced pinch of sea salt
    1 14 oz can of black beans, drained and rinsed
    1/2 cooked chickpeas (if from the can, drain and rinse)
    1/4 cup Italian parsley, roughly chopped
    2-3 green onion stalks (green part only), roughly chopped
    2 tablespoons sunflower seeds
    2 tablespoons dried oregano
    1 tablespoon ground cumin
    1/2 tablespoon paprika
    1/2 teaspoon red pepper flakes (or to taste)
    1/2 teaspoon sea salt & 1/2 teaspoon ground black pepper
    1 3/4 cups whole oats

    Mix the flax and the water together in a small bowl and allow it to sit for 15 minutes or until it begins to become gelatinous (this will be your “egg” and act as a binder).

    Wash, but do not peel the sweet potato. Shred it by using a hand grater or run it though a food processor using the shred blade.

    To a large non-stick pan, add the sweet potato, red onion, and mushrooms. Over medium heat and stirring often, allow the vegetables to cook down. Once they begin to soften, add in the garlic and a pinch of sea salt. Transfer to a food processor. Add the black beans, chickpeas, parsley, green onion, sunflower seeds, spices, and flax/water mix.

    To a blender, add one cup of the oats and grind down until it is a coarse flour.

    Add the flour and 1/4 of the whole oats to the food processor with the rest of the mixture.

    Pulse the mixture until well mixed, but not blended or pureed.

    Making the burgers

    Transfer to a large bowl and add the rest of the oats.

    Mix well with your hands and taste. Adjust spices to your liking.

    Cover and refrigerate the mixture for an hour up to overnight.

    Preheat oven to 375-F. Line a baking sheet with parchment paper.

    Patty up your burgers. I made mine about 3″ in diameter and 1/2″-3/4″ thickness.

    Bake for 18 minutes on one side, flip and bake for another 10 minutes.

    NOTES:

    These can be made into sliders or meatballs; remember,you’ll have to adjust your cooking time down the smaller the patty.
    You can either refrigerate the mixture or patty up the burgers and and refrigerate them – either way, be sure to cover them.

    Recipe: Charred Tomato Salsa

    My husband and I make this every summer with almost every ingredient from our own garden. We eat it all year long. We also share it with family and friends.

    6 large ripe Cherokee Purple tomatoes, core removed

    3 tablespoons olive oil

    1 onion, thinly sliced

    6 cloves garlic

    2 jalapeno chilies, stem removed

    1 tablespoon chopped fresh cilantro

    Salt to taste

    Lime juice to taste

    Preheat broiler to 500 degrees.

    Place tomatoes on a baking sheet and brush the tops with 1 tablespoon olive oil. Place pan under broiler and char until skin is blackened, about 12 minutes. Remove from oven and set aside.

    Preheat oven to 375 degrees.

    Place onion, garlic, and jalapenos on a baking sheet and drizzle with remaining olive oil. Toss to coat. Place pan in oven and roast for 12 – 15 minutes, stirring occasionally, until golden brown. Remove pan from oven and set aside.

    In a meat grinder, with a medium die, grind tomatoes, onion, garlic, and jalapenos with cilantro. To mixture add a generous amount of salt and lime juice to taste.

    i8tonite with Larchmont Village’s Vernetti Chef Steve Vernetti & his Semolina Pancakes RecipeOn a Wednesday night in Larchmont Village in the heart of Los Angeles, every table at Vernetti was full. The owner and chef Steve Vernetti was in the house, moving between the kitchen and the dining room, talking to everyone as though they were old friends. Indeed, it was obvious that there were many regulars. Vernetti is a neighborhood restaurant, the kind of place you come to rely on for all the important events of life – birthdays, anniversaries, and first dates. The atmosphere was lively, casual, and comfortable. There’s a modern European bistro aesthetic, thanks to Steve’s wife Joanne, who worked with designer David Thompson on the remodel of the original space. The staff made us feel like rock stars. The food was excellent.

    His chef training started early. Vernetti notes, “Growing up, we learned how to butcher our goats, pigs, chicken, and turkeys. My brother and I got up at 5 every day before we went to school and milked the goats. We learned how to grow our food. My mother bought me my first cookbook, Mastering the Art of French Cooking. The first thing I made from that book was chocolate eclairs.”

    Before settling in Los Angeles in the 90s, Vernetti traveled throughout Europe, gathering influences from Berlin, Paris, Venice, Amsterdam, and Florence. He then lived in London for seven years, working with Chef Charles Fontaine at Quality Chop House and Le Caprice. It is easy to see the old world influences mixed with the new at Vernetti, where Steve is in the kitchen every day experimenting with inventive takes on classic recipes.

    He’s also a thoughtful owner – “Working in the restaurant industry for as long as I have, I want my staff to be happy. We run a place where my dishwashers are key players in the business, just as much as the front of the house. We need the staff to be happy. If they are happy, my customers will notice it and they will be happy, too.”

    We decided to try many dishes and share them round, starting with the gnocchi, a traditional northern Italian dish that is typically a rather dense potato pasta. This gnocchi was light and airy, rich with ricotta cheese and egg yolks, and topped with sage butter.

    We followed the gnocchi with vongole and shrimp scampi, since Vernetti is known for their house-made pastas. You’ll definitely want to try at least one.

    Vernetti has an excellent wine menu, with a selection of Italian wines that covers the boot from north to south. There are also some great California wines on the menu. We decided to order by the glass so we could pair a different wine with each dish, which I think is a lot more fun. If you find something you love, you can always order more! You can also bring your own bottle and pay the corkage fee of $25.00. If wine is not your thing, Vernetti’s has a decent beer selection, though I confess my knowledge of beer is limited. I prefer the juice of the grape.

    Vernetti is a neighborhood restaurant, and since I’m not a local there, I felt quite lucky to have found it. It reminded me of an Italian trattoria where the owners are always there and live nearby. The menu is fresh, and dishes are served until they run out of the ingredients to make that particular dish. I recommend this restaurant to everyone!

    Ingredients
    2cups Semolina
    2cups all purpose flour
    4tsp baking powder
    2tsp baking soda
    1/2tsp salt

    Sift dry ingredients in a bowl and add:
    4eggs
    3-4 cups buttermilk (plain whole milk will work)
    1/2cup vegetable oil

    Directions
    Mix but leave lumps. Use well oiled cast iron pan or griddle on medium high heat and brush browned tops with melted butter – enjoy!

    I chatted with Feride via Skype, and as we talked, I grew more and more impressed with her worldview – and cooking. Originally from Azerbaijan, Feride moved to the US about 15 years ago. While she visits home as often as possible, she wanted to cook the foods she grew up with, to satisfy her cravings for food from home. Feride had started a recipe notebook when she was 13, curating those recipes as stories. To supplement that small notebook once she was in the US, she started calling her mom, grandma, sister, and other family members (all excellent home cooks) to ask for recipes from home. She conceived of her cookbook when she was 8 months pregnant (talk about pregnancy food cravings!), and has worked for 7 years on her book and accompanying website. She talked about not giving up on her dream, and gaining an education in the publishing industry – that “it’s a hard road, but so worth it.”

    It shows. The book is beautiful, informative, and chock full of cultural goodness. The website shares recipes, links to interesting food articles, and travel and cooking inspiration. When I asked Feride what she’d want to say to readers about Azerbaijani cuisine, she noted, “Don’t be scared of the name Azerbaijan. The food is a beautiful melange of cultures, and is unique. The ingredients are widely available in the US and not scary. See for yourself how delicious it is!”

    She is the perfect bridge to representing two countries in cooking, an ambassador from Azerbaijan who shares the best way to learn about a place – through its food, recipes, and culture.

    One thing I loved learning about the culture and cuisine of Azerbaijan is the traditional hospitality toward guests. For meals, the table is filled with as many dishes as possible, putting the best you have out for your guests. If there’s a celebration (birthday, wedding) meal, there’s a person at the head of the table to make toasts. Meals are to be lingered over, while enjoying the time spent together.

    What is your favorite food to cook at home?
    Stuffed grape leaves – dolma. Very laborious, but the entire family is crazy about it.

    What do you always have in your fridge at home?
    Plain yogurt (homemade) and milk (because I always need a batch to make yogurt again), and fresh herbs (cilantro, parsley, etc).

    What marked characteristic do you love in a person with whom you are sharing a meal?
    Enjoying the food set in front of him or her and being appreciative.

    Cliche, but a good knife and a sturdy cutting board. Also a good blender for those impromptu smoothies.

    No favorite. I don’t want to pick a celebrity chef because there are many chefs out there who are equally talented yet don’t have media exposure. So, to me, any chef who is hard working, creative, yet humble is admirable.

    Food you like the most to eat?
    I love food of all sorts and anything delicious is good for me. I love anything with eggplant. Also, lamb kabab. And, if it’s pomegranate season, I love the fruit. I also like dried fruits. b. See? My list can continue.

    Food you dislike the most?
    It’s more of an ingredient – wasabi. Every time I try to like it, my palate says no.

    Dancing flamenco (my hobby), reading when my brain is not cluttered, and chatting with friends around tea table.

    Its innate power to bring people together. Everywhere.

    At home, in any home. I love homemade foods. They come with stories and if it’s a good company, with a good dose of laughter.

    What is your favorite restaurant?
    I really like ethnic restaurants serving traditional or fusion foods. There are a few on my mind but no absolute favorite yet.

    Do you have any tattoos? And if so, how many are of food?
    No tattoos. But I am beginning to wonder if a pomegranate tatoo would look good on me.

    Recipe: Fresh Herb Kükü

    In Azerbaijan, kükü (read: kyukyu) is the general name given to dishes in which main ingredients—vegetables, herbs, meat or fish—are bound with eggs, then browned on both sides on a stovetop. It is not to be confused with omelet, as the featured ingredients in kükü are used in far greater amounts than eggs. By its appearance and texture, kükü can be likened to a Persian kookoo, Middle Eastern eggah, Spanish tortilla or Italian frittata.

    Simplicity in itself, fresh herb kükü is by far the most popular and the most frequently made kükü of all in the versatile kükü repertoir. In this light summer dish, fresh herbs are mixed with eggs, then the mixture is leveled in a frying pan and cooked in butter on both sides to yield a tender, flavorful interior laced with a golden surface

    If you wish, add some fresh mint to the kükü, and if in season, fresh green garlic (green parts only) as well, decreasing the amount of other herbs accordingly. Sometimes, spinach is added too. Herb-laden tender kükü wedges can be served cold or at room temperature as an appetizer or immediately as a light standalone dish with bread or as a side dish to rice pilaf. You can also make it a part of your breakfast and brunch menu. Don’t forget to drizzle the kükü with thick, creamy garlicky yogurt sauce, for that extra touch of authenticity.

    Serves 4

    Ingredients
    2 packed cups chopped fresh cilantro
    1 packed cup chopped fresh dill
    ½ cup fresh green onions
    5 eggs
    ½ teaspoon salt
    Ground black pepper to taste
    ¼ cup unsalted butter or clarified butter (can substitute olive oil)
    Garlicky yogurt sauce (mix 1 cup plain yogurt with crushed garlic to taste) or plain yogurt, to serve

    Instructions
    In a large mixing bowl, combine the chopped fresh herbs and eggs. Season with salt and pepper, then stir with a spoon to mix well.
    Melt the butter or oil over medium heat in a 10-inch non-stick frying pan. Pour the herb-egg mixture into the pan to fill it completely, leveling it with the back of a spoon. Cook until golden brown on the bottom, 5 to 8 minutes.
    Using a knife, carefully cut the Kükü into 4 wedges (or 8 if you wish). Gently turn the wedges over to brown the other side. If you need to, add more butter or oil to the pan.
    Remove the cooked Kükü from the heat and transfer it onto a serving platter. Serve with bread or as accompaniment to rice pilaf.
    Separately serve a bowl with garlicky yogurt sauce or plain yogurt, to spoon onto Kükü to taste.

    Recipe: Sumac and za’atar roasted chicken with roasted vegetables

    Recipe serves 4 people

    Ingredients:
    3 tablespoons butter
    1 teaspoon finely chopped parsley
    1 teaspoon ground sumac
    2 teaspoons za’atar (Eastern Mediterranean spice blend containing thyme, cumin, sumac, and sesame seeds)
    1 clove garlic, peeled and finely chopped
    Finely grated zest of 1 lemon
    1/4 teaspoon salt, plus more to taste
    Freshly ground black pepper, to taste
    1 2 1/2- to 3-pound chicken, wings and wishbone removed

    Preheat the oven to 350° F. Soften 2 tablespoons of the butter to room temperature and combine with the parsley, sumac, za’atar, garlic, lemon zest, salt and pepper in a mixing bowl. Fill a small disposable piping bag (or plastic bag with a corner snipped off) with the mixture and reserve.
    Place the piping bag under the skin at the top of the breast and squeeze the butter mixture under the skin. Using your hands, spread it out to cover the whole breast. With butchers twine, make a loop below the knee joints on the drumsticks. Pull the neck skin underneath the bird and tuck the drumettes. Using the twine looped around the legs, tie a knot.
    Coat the outside of the chicken with the remaining tablespoon of soft butter, and season with salt and pepper. Place the chicken in a hot cast iron pan. Cook the chicken in the oven for 50 minutes, basting with the renderings every 10 minutes. Remove the chicken to rest and reserve the pan and the renderings to roast the vegetables.
    Roasted vegetables:
    1 piece fennel bulb, cut into quarters and cored
    6 white pearl onions, peeled
    6 small potatoes, cut lengthwise into quarters
    Finely grated zest of 1 Meyer lemon
    10 Taggiasca olives, pitted
    1 teaspoon finely chopped parsley
    Salt and freshly ground black pepper, to taste

    Increase the oven temperature to 425° F. Toss the potatoes and fennel in the pan that was used to roast the chicken, so that they are coated with chicken renderings. (You may also choose to roast the vegetables in a clean pan, tossed in the renderings and additional butter or olive oil, if needed.) Roast for 15 minutes, then add the pearl onions and cook for an additional 10 minutes. Drain the excess renderings from the pan if necessary, then toss with the zest, olives and parsley. Season with salt and pepper to taste.
    To serve, quarter the chicken and cut the legs in half, at the joint between the drumstick and thigh. Serve the chicken and vegetables together on individual plates, or pass family-style.

He never went back. Although not fond of the Big Apple, he had already started a love affair with Miami. It was the warm air and white sand of the North American peninsula that captured his young expatriate heart.

    Starting in Hollywood, Florida, Harvalis began working his way up in Taverna Opa, a group of Greek restaurants starting as a server. Over the next several years, he worked his way up the restaurant ladder. From waitperson to bar, assistant manager to manager, learning the ways of running a successful eating establishment.

    “In 1997, I left to join the nightclub industry,” says Harvalis. “I worked as the General Manager for Nikki Beach Group, then one of the most popular entertainment and dining companies in South Beach.” Nikki Beach transcended the beach club concept by combining Southern European elements of music, dining, entertainment, fashion, film, and art into one. Essentially, Ibiza came to Miami. This lead to Harvalis becoming an entrepreneur. Over the next three years, he was a co-owner of RokBar, one of the area’s leading nightclubs. At the height of its status, the velvet rope swung open for movie stars (Josh Hartnett, Mickey Rourke) and music acts (Courtney Love, Tommy Lee).

    Around 2012, Harvalis was having life-changing moments. Marriage. A daughter. The nightlife scene wasn’t fitting into his growing-up. “I took the decision to change my life,” he says. “I had never owned a restaurant and always wanted to have one.” So, he looked back to his Mediterranean roots and opened Elia (meaning “olive” in Greek) Miami.

    Recipe: Papoutsakia

    The meal is called PAPOUTSAKIA ( it means a little shoes in greek )
    2 large eggplants
    2 pounds ground beef or turkey
    1 small white onion
    1 tomato
    salt / pepper/ oregano/ olive oil
    a small amount of fresh parsley
    1 lb dry shredded mozzarella
    6 potatoes

    Cut the large eggplants in half long ways.
    Use a small spoon (or tool) to empty the eggplant heart without damaging the skin (do not open a hole).
    Once finished, use a small amount of olive oil to coat the inside of the eggplant and place in the oven for 10 min (350 F).
    In the meantime, take the eggplant that was removed, the onion, tomato, and parsley, and fine chop all of them.
    Take a skillet and drizzle a small amount of olive oil and place it on the stove on high. After one minute, carefully add all the chopped ingredients, adding a pinch of salt, pepper, and oregano.
    After about five minutes, add the ground meat of your choice and stir all of them until the meat is cooked ( usually no more than 5 – 6t minutes do not overcook it ).
    Once, ready use a spoon and add the mix to the eggplant until its filled.
    Top it off with the mozzarella cheese, and place in the oven on bake until the cheese turns to golden brown.
    Take the potatoes and cut them in quarters long ways ( skin on or off, your choice). Place in a pan with a bit of olive oil, salt , oregano, and pepper; toss them around until seasoned, and place in the oven for 20 minutes. It can also be served with yellow saffron rice.
    Oonce everything cooked, serve it with a nice glass of Cabernet and GO EAT !!!!!

    Born in New Jersey but raised in Arizona, Russo has long been cooking. She started learning some of the family secrets with her father’s grandmother, who emigrated from Italy. As a teen, Russo’s passion for cookery led to a variety of food schools in her Scottsdale-area home but eventually – at the age of twenty-one – became a San Francisco transplant at one of the city’s noted gastronomic institutions. Russo says, “I waited to go to school so I could learn the cocktail classes. I wanted to be of legal age.”
    After graduating, realizing the expense of living in the City by the Bay, she returned to The Grand Canyon state and worked with two venerated Sonoran desert chefs continuing her epicurean education. It began with Vincent Guerithault of Vincent’s on Camelback, which led her to a sous chef position with Mark Tarbell at Tarbell’s.

    Recipe: Rack of Lamb with Pinot Noir Sauce

    INGREDIENTS
    Three 8-bone racks of lamb (1 1/2 pounds each), trimmed of all fat, bones frenched
    Coarse salt and freshly ground pepper
    1 T minced garlic
    1 1/2 tablespoons olive oil
    Zest of one lemon
    1 cup Pinot Noir
    1 garlic clove
    1 thyme sprig
    1 cup chicken stock or canned low-sodium broth
    2 tablespoons cold unsalted butter, cut into 4 pieces

    METHOD
    Preheat the oven to 425°. Season the lamb racks all over with coarse salt, pepper, minced garlic, & lemon zest. Heat 1 tablespoon of the oil in a large skillet and the remaining 1/2 tablespoon of oil in a medium skillet; both skillets should be ovenproof. Add 2 of the lamb racks to the large skillet and 1 rack to the medium skillet, meaty side down. Cook the racks over moderately high heat until well browned, about 4 minutes. Turn the racks and brown the other side, about 3 minutes longer.

    Transfer the skillets to the oven and roast the lamb for 15 to 20 minutes, or until an instant-read thermometer inserted in the thickest part of the meat registers 120°or rare and 125° for medium rare. Transfer the racks to a carving board and let rest for 10 minutes.

    Meanwhile, set the medium skillet over high heat. Add 1/2 cup of the wine and bring to a boil, scraping up any browned bits. Pour the wine into the large skillet and add the garlic and thyme. Set the large skillet over high heat, add the remaining 1/2 cup of wine and boil until reduced by one-third, about 3 minutes. Add the chicken stock and boil until reduced to 1/2 cup, about 8 minutes. Remove the skillet from the heat and discard the garlic and thyme sprig. Whisk in the butter, 1 piece at a time. Season with salt and pepper and strain the sauce into a warmed gravy boat.

    To serve, cut the lamb into chops and arrange 3 chops on each dinner plate. Pass the Pinot Noir sauce at the table along with a little coarse salt for sprinkling on the lamb.

    Recipe: Hot, Buttered Cauliflower Puree

    INGREDIENTS
    Two 2-pound heads of cauliflower, cored and separated into 2-inch florets
    2 cups heavy cream
    1 cup mashed potato
    1 1/2 sticks unsalted butter
    Salt
    Pepper
    Chives, chopped

    METHOD
    Preheat the oven to 325°. In a large pot of boiling salted water, cook the cauliflower florets until tender, about 7 minutes. Drain well. Spread the cauliflower on a large rimmed baking sheet. Bake for about 5 minutes, to dry it out.

    In a small saucepan, combine the heavy cream with the butter and bring to a simmer over moderate heat just until the butter is melted.

    Working in batches, puree the cauliflower and mashed potatoes in a blender with the warm cream mixture; transfer the puree to a medium bowl. Season with salt, pepper, and chives.

    Recipe: Braised Baby Peas with Pearl Onions and Herbs

    INGREDIENTS
    12 pearl onions
    2 tablespoons unsalted butter
    1 pound baby peas, blanched
    3 tablespoons low-sodium chicken broth
    1 tablespoon finely chopped mint
    1 tablespoon snipped chives
    Kosher salt and freshly ground pepper

    METHOD
    Bring a medium saucepan of water to a boil. Add the pearl onions and boil for 10 minutes. Drain and rinse under cold water. Peel the onions, leaving the root end intact.

    In a medium, deep skillet, melt the butter. Add the pearl onions and cook over moderately high heat until browned, about 3 minutes. Add the peas and simmer over moderate heat until the peas are tender and bright green, about 3 minutes. Remove from the heat. Add the mint and chives, season with salt and pepper and serve. When plate is complete,  garnish with roasted cauliflower florets and fresh mint.

    I8tonite: with Tucson's Casino del Sol Mixologist, Aaron de Feo, and a Tom Turner Overdrive Right out of college, Casino del Sol’s renowned mixologist Aaron de Feo was turned down for a journalism job in his hometown of Tucson, Arizona. As the saying goes, “When someone hands you lemons, you make margaritas.” And, that’s exactly what de Feo did. He has become the one of the country’s prominent mixologists while working at the 215 room property owned by the Pascua Yaqui Indian tribe, a native area nation of the forty-eighth.

    Before he landed at Arizona’s only Forbes Four Star and AAA Four Diamond casino resort, de Feo also worked at the landmark Hotel Congress, the city’s only other exciting property, perfecting his craft of blending liquors. Since he’s landed at Casino del Sol, however, his creative drinks have been showcased, turning de Feo into one of the I8tonite: with Tucson's Casino del Sol Mixologist, Aaron de Feo, and a Tom Turner Overdrivecountry’s leading libations makers. His business card names him Beverage Director, but he has been called by GQ as “Top 10 Most Inspired” and “Celebrated Doctor of Mixology” by Nightclub & Bar Magazine. He even has a nickname, “Doc,” used by his Old Pueblo liquor networks and friends, turning him into a cocktail cowboy of sorts – although de Feo’s more likely to pull out six shots of his favorite gin, rather than a six bullet shooter.

    Importantly, one of the first things he accomplished when opening the four-diamond property was to invigorate Arizona’s growing swizzle stick scene on his turf.  He ensured that all staff learned how to master scratch beverages using simple syrups, freshly squeezed juices, and macerated herbs. De Feo’s distinguishing mark is to insure that any customer had a thirst-quencher made from wholesome ingredients, nothing made with food coloring or preservatives.

Because we have a good, local music and cultural scene, many of the bar owners didn’t care about changing. They now do. There is a difference which is because of the hotel.”

    According to Visit Tucson, the area’s bureau on tourism, there has been an uptick of yearly visitors from 3.4 nights in 2011 to 4 full nights in 2015. It can be attributed to many factors. Since the progressions occurred during de Feo’s term at Casino del Sol, the safe conclusion about the growth is the word is out about his crafty liquor potables. Resort and area guests want a drink from “Doc,” knowing that what he concocts will surely cure what ails them.

    What is your favorite food to cook at home? I tend to cook rather simple meals, mostly lean, grass-fed meat, vegetables, and legume pasta. However I’m very partial to making sauces, which I think comes from how often I am working with flavoring agents in cocktails.

    What do you always have in your fridge at home? A galaxy of various syrups and house-made ingredients for cocktails, which is funny because I don’t drink cocktails at home that often.  Mostly they are experiments that I have elected to save for posterity.

    What marked characteristic do you love in a person with whom you are sharing a meal?  Honesty.

    What marked characteristic do you find unappealing in a person with whom you are sharing a meal?  Anyone who tries to decide for me what “we” are having at a restaurant.

    Your favorite cookbook author? Maybe not a cookbook, but certainly Harold McGee’s work on the science of food is fascinating.

    Your favorite kitchen tool? A really great Y peeler.  So many of them are garbage.

    Favorite types of cuisine to cook? Italian, without question.  Focus on the ingredients and their harmony more than intricacy.

    Beef, chicken, pork or tofu? Beef.  Chicken gets re-heated so often in fast casual places.

    Favorite vegetable? I’m a huge fan of green peas with truffle salt & olive oil, and brussel sprouts, of course.  Baked cauliflower is about the greatest thing ever.

    Chef you most admire? I don’t go in for celebrity chefs much.  I certainly admire many of the chefs I’ve worked with, especially the ones whose cuisine has inspired me behind the bar.  I admire Phoenix-area chef Cullen Campbell (Crudo, OKRA) quite a bit because he has managed to do extraordinary things with styles of food that I’m not entirely comfortable with, and still has me coming back for more.  His take on Southern cuisine is simply incredible.

    Food you like the most to eat? Really great pasta with really great sauce.  Nothing better.

    Food you dislike the most? I guess I just don’t get the phenomenon of tartare and paté.  Texture and aroma mean a lot to me, and the mushy, raw consistency of those things triggers a flight mechanism in my mind.  I guess that makes me the foodie equivalent of a hillbilly, but I don’t care.

    What is your favorite non-food thing to do? I suppose that excludes going to cocktail bars.  I spend a lot of time working out late at night, by myself.  There’s something extraordinarily calming about it, almost like hitting a sweaty reset button on my day.

    Who do you most admire in food? Dave Arnold, for making that leap from food to beverages and showing us all how it’s done.

    Where is your favorite place to eat? Sonoran Mexican restaurants, no doubt.

    What is your favorite restaurant? Mercantile Dining & Provision in Denver is not only one of the coolest spaces I’ve dined in, but the food and service were mind-blowing.

    Do you have any tattoos? And if so, how many are of food? I think I’m one of the last people in the industry with no tattoos, and honestly it’s getting to the point where that’s almost a disadvantage… like I’m not in the cool club.

    • George Dickel Select Barrel Tennessee Whiskey (1.5 oz)
    • Creme de Mure (1 oz)
    • Fresh lemon (.5 oz)

    • Shaken and double-strained over crushed ice with four dashes of house aromatic bitters. Garnish with mint and blackberries (if available)

    i8tonite: with San Francisco Chef Kathy Fang, Fang Restaurant and Pesto Udon Noodles Chef Kathy Fang is the daughter of one of San Francisco’s legendary chefs, Peter Fang of the House of Nanking. To the uninitiated, those who have never eaten Chinese food in Shanghai or one of the major Asian-American urban hubs such as Los Angeles, New York, Seattle, and Vancouver have probably eaten the domestic version normally laden with excess soy sauce, oils and fried. Shanghai food mixes a variety of regional Chinese cooking, primarily because the twenty-four million inhabitants  come seeking work in the big city. Street carts characterize the cuisine – eat and run – such as steamed buns, scallion pancakes, and a variety of rice balls. Each morsel can produce bold, complex flavors if placed in the correct hands – such as Chef Fang. Even today, more than twenty-five years later, queues are outside the first Chinatown located restaurant with far-flung travelers, guidebooks in hand, ready to dine on Fang’s Shanghainese-type eats.

    i8tonite: with San Francisco Chef Kathy Fang, Fang Restaurant and Pesto Udon NoodlesAlong comes his daughter, Kathy Fang, who is every bit her father’s progeny but personifies the new generation of chefs, realizing that there is more than just the kitchen to cooking. After working in the corporate scene, the younger Fang decided to follow in the family’s footsteps, learning about European cooking techniques at a premier local culinary school. Together, in 2008, the father and daughter team opened Fang Restaurant, an elegant establishment focusing on the Chinese regional foods, but with a more refined, gastronomic approach.

    “I’m very blessed to be around my dad and parents,” states Ms. Fang about working with her parents and father. “My dad can be very stubborn but we work together many hours of the day. Ultimately, we have a very loving relationship inside and outside the kitchen.”

    Last year, Ms. Fang, was a winner on Food Network’s Chopped, the broadcast cooking competition show which places four chefs against each other with the hopes of winning ten thousand dollars. Ms. Fang, a petite and attractive woman, beat three burly Caucasian men. She says of winning, “Now, we get customers, mostly female, who come into Fang. They say, ‘I was rooting for you all the way against those guys. It was great to see a woman win.’ “

Outside the kitchen, though, she is branding herself as a culinary leader with My Fangalicious, her website and family recipes. Her hopes are to become the next Martha Stewart with a “branded wok” and other gastronomic items like her Caucasian predecessors. As her clientele has attested, it’s good to see diversity in the food mix, so all people can be included in the conversation.

    What marked characteristic do you find unappealing in a customer? Customers who finish their meal and then tell you afterwards they didn’t like it. If you don’t like it, mention something right away. I feel like any restaurant would apologize and offer to make something different for you. Just be up front in the beginning, and we would be more than happy to make any changes for you.

    Beer, wine, or cocktail? Wine to wind down at home or when having dinner. Cocktails for a night out, a gin martini to be exact.

    Your favorite cookbook author? David Chang. I love how he weaves his own story into the growth of all his restaurants. You learn about him, his restaurants, and his recipes all in one book.

    Your favorite kitchen tool? This may seem weird but my electric kettle at home. I’m obsessed with it mostly because it heats up to boil so fast. I boil water for tea, water for boiling pasta, water for blanching. I also heat up soups using the kettle because it’s so fast. I just let it go, brush my teeth, work on my computer and then it shuts off after it boils. I also boil eggs in there in the morning.  For the cost and how often I use it and in so many different ways, it’s really one of the best little kitchen tools I have.

    Your favorite ingredient? Soy sauce (I grew up eating this and I can’t imagine my cuisine without it)

    Your least favorite ingredient? Lemon pepper. I always think it has this weird fake element to it. And I never understood why you wouldn’t just use fresh lemon or citrus and freshly cracked pepper.

    Least favorite thing to do in a kitchen? Dishes

    Favorite vegetable? I know it’s an overused vegetable and it seems like it’s that overly popular girl at school that everyone seems to talk about, but KALE is truly one of my favorite vegetables. For one, I’m a health nut, so any vegetable that I find healthy, I like. But aside from that, I find kale super versatile. I buy in big amounts because I can go through it all week. I can bake kale until it’s crisp like chips, I can sautée with eggs in the morning for breakfast. Kale works well in soups and stews. It also makes great salads if done right.  And finally toss it in smoothies to get extra vitamins and fiber. There are just so many ways to eat kale!

    Recipe: Pesto Udon Noodle Salad

    i8tonite: with San Francisco Chef Kathy Fang, Fang Restaurant and Pesto Udon NoodlesServes 2.

    Make fresh pesto by blending fresh Italian basil, 2 garlic cloves, 3 tablespoon grated parmigiano reggiano, 2 tablespoons pine nuts, 4 tablespoon high quality evoo, and salt. Taste and set aside. Bring a pot of water to boil (or use electric kettle) and pour the hot water over packaged udon noodles. Separate the noodles and let sit for 1 minute and stir.  Remove from water and run under cold water.  Set aside.  Dress the udon with freshly made pesto and plate. Slice some grilled chicken breast or roasted chicken and top the udon with it. Mozzarella balls and cherry/grape tomatoes are a great addition to this dish, as is a generous sprinkle of parmigiano reggiano.

    i8tonite: Chef Scott Simpson from Auburn, Alabama’s The Depot and Blue Corn GritsIn September 2015, Chef Scott Simpson, along with his partners, opened the seafood restaurant, The Depot in Auburn, Alabama. It’s the  newest dining establishment in a town which is also home to the well-known University of Auburn. Overall, the southern enclave, although small compared to larger urban areas, is home to more than sixty thousand individuals, mostly employed by the liberally based higher learning institution.

    It’s a far cry from the Southern California beaches where Simpson grew up and many of the global culinary regions where his chef skills were perfected. For more than a decade, Simpson worked at the JW Marriott, first in Palm Springs and then, cheffing at the property in Quito, Ecuador. He joined Capella Hotel Group, luxury hotelier, as the opening chef for many of their new global properties. He skillfully crafted menus for the room and boards’ restaurants in Mumbai, Bali, Mexico, Singapore, the Caribbean, and domestically, in the United States south including Washington D.C, Virginia Beach, and then to Auburn. At each global stop, Simpson acquired cooking nuances used in each cuisine.

    i8tonite: Chef Scott Simpson from Auburn, Alabama’s The Depot and Blue Corn GritsHoused in a former train station, The Depot was reincarnated as a restaurant, a Southern hospitality showcase to its Victorian birth and former life as a transportation hub. Original black and white tiled floors have a polished sheen, a massive shining chandelier dusts a warm glow over the tufted, leather booths and wooden tables. It’s breathtaking food hall for Simpson to display his virtuosity, skillfully turning the former rail station into a delicious seafood brasserie. From the menu descriptions, there’s an international traveler and culinary master manning the stove, with the flash fried cobia wings served with a buffalo buerre blanc, blackened amberjack with a hoppin’ john risotto, short rib osso buco with an ancho demi glaze. Each item plucked  is an ode to the Deep South combined with an international flavor.

    With The Depot under Simpson’s adroit cookery talent, Auburn may have a destination restaurant to rival any of the big cities. Luckily, for the college town, Simpson is calling it home.

    What is your favorite food to cook? Super fresh Seafood (It’s also my favorite NOT to cook – nothing like a delicious crudo or sashimi).

    What do you cook at home? “Somma Pasta” – I like to open my fridge and make a simple and spontaneous some-of-this and some-of-that dish. I love making creative pasta dishes. I received formal culinary training in Florence, and pasta is always a comforting and quick dish to make.

    What marked characteristic(s) do you love in a customer? Adventuresome diners eager to step outside their norm and willing to trust me to introduce them to a new flavor or dish. Sharing guests who have enough appetite to keep tasting and tasting and sharing dish after dish at their table. AppreciativeI love customers who understand this is my artwork, I crave feedback and comments, I am always waiting to hear their honest assessment of the dish.

I confess I am disappointed in those guests who come in, smile, and say “everything was so wonderful and delicious,” and then terrorize you later that week on Social Media.

    Tupperware, Rubbermaid, or Pyrex? We use clear square Cambro’s in the restaurant to be more space efficient and reduce potential breakage. At home, my wife and I like more eco-friendly, Pyrex style glass containers. They don’t get scratched from scrubbing or stained from a curry or a Spicy tomato sauce.

    Beer, wine, or cocktail? Wine: I spent a lot of my life working in restaurants with amazing wine cellars. I am totally spoiled and have a strong appreciation for the pleasure of wine with food. Plus, I’ve never read a Bible story of Jesus changing water into anything else but wine.

I really respect the meticulous research and commitment to the authenticity of chefs like Rick Bayless or Marcella Hazan. Many other chefs throw all that out the window in order to market a gimmicky twist. Many longstanding recipes and techniques are the way they are for a reason.

    Your favorite kitchen tool?  Tasting spoons.

    Your favorite ingredient? I think Garlic is delicious in most anything and the same for a squeeze of fresh lemon…and never underestimate the difference a great sea salt like Maldon makes.

    Your least favorite ingredient? Sugar!

    Least favorite thing to do in a kitchen? Waste something.

Certainly I remain humbled by true Indian Cuisine. Still I try to satisfy myself with a semblance of Indian cooking I enjoyed there while working with some of the very best Chefs in all of India.

    Beef, chicken, pork or tofu? I love them all, but beef is hands down what I most often crave – after fresh seafood. I start salivating when I see a tender juicy medium-rare steak. Fewer things are more satisfying than slicing into a perfectly cooked piece of properly aged, high-quality, well-marbled meat.

    Favorite vegetable? Super tough question! Frequently I incorporate exotic mushrooms, or eggplant, which enhances many dishes. Also, I enjoy a very simple side of Sea Salt Maple Roasted Carrots that we pair with our Pecan Brown Butter Trout. Right now, I’m featuring some delicious Malabar spinach, rainbow chard, and Red Mustard frills, which are fresh and seasonal here in Auburn, Alabama.

I admire Jamie Oliver, simple pure style of cooking, his obvious, passionate enjoyment of cooking.     Food you dislike the most? Unauthentic, “mis-prepared” or ruined ethnic specialties.

    Recipe: Chef Scott Simpson’s Blue Corn Grits

    Ingredients:

    • 2 teaspoons kosher salt
    • 1 qt. water
    • 1 cup stone-ground grits
    • 2 ½ tablespoons butter
    • 2 ½ tablespoons mascarpone
    • Crumbled artisan bleu cheese to taste

    Preparation

    1. Bring salt and water to a boil in a heavy saucepan over high heat. Whisk in grits, and cook, whisking constantly, 45 seconds. Scrape bottom and sides of the pot.
    2. Return to a boil; cover and reduce heat to medium-low. Cook 20 to 25 minutes or until tender. (For a looser consistency, whisk in 2 to 4 Tbsp. water halfway through cooking.)
    3. Stir in butter and mascarpone until fully melted. Garnish with artisan crumbled bleu cheese and serve immediately.
